MAKES 8 SERVING.


FOR A BAKERY PERFECT LOOKING CRUST,THE EASIEST AND NEATEST WAY TO TRIM OF A TART PAN IS TO RUN A ROLLING PIN ACROSS THE TOP OF THE PAN SO THAT THE METAL EDGE CUTS TRHOUGH THE DOUGH.

1 1/4 C. ALL-PURPOSE FLOUR
1/4C.CONFECTIONERS SUGAR
1/4 TSP.SALT
8 TBSP.COLD BUTTER (NO SUBTITUSTIONS)
3 TO 4 TBSP.ICE WATER

LIME PASTRY CREAM
1 C.WHOLE MILK
3 LG.EGG YOLKS
3/4 C. GRANULATED SUGAR
2 TBSP.CORNSTARCH
